B-D-fructofuranoseis phosphorylated through an ATP driven fructokinase resulting in the release of B-D-fructofuranose 6-phosphate. -D-sorbitol reacts with sorbitol dehydrogenase resulting in the release of keto-D-fructose.The latter compound reacts spontaneously in B-D-fructofuranose.
